Recipe: Banana Foster Parfait

Last week we provided you with a simple, fun recipe to make with the kids during your Fourth of July or other summer barbecues. We would like to share a treat just for you that is fast, easy and a good nutritious breakfast. The Banana Foster Parfait has just enough potassium and protein to get you energized for your day. If you are always on the go, then this recipe can be prepared and stored in the fridge to accommodate your busy schedule.

One of the main ingredients in the parfait is reduced-fat Greek yogurt, which has a lot of nutritional value. Greek yogurt is good source of protein and probiotics which is great for the digestive system. And it contains vitamin B12, a good energy builder that promotes healthy brain function. Of course you cannot forget all the nutritional value of bananas, including potassium, fiber and many other vitamins that help keep you strong and healthy.

Ingredients:

  • 2large ripe bananas
  • 6 tablespoonsdark brown sugar
  • 2 tablespoonsunsweetened apple juice
  • 1 tablespoonunsalted butter
  • 1/4 teaspoonsalt
  • 2 cupsplain 2% reduced-fat Greek yogurt
  • 1/4 cupchopped pecans, toasted

Serves 4

Directions:

  1. Peel bananas, and cut each banana in half lengthwise. Cut each half into 3 pieces
  2. Combine sugar and next three ingredients in a nonstick skillet. Cook over medium-low heat for three minutes or until sugar mixture begins to bubble
  3. Add bananas to pan; cook for two minutes or until bananas begin to soften
  4. Spoon 1/2 cup yogurt into the bottom of each of four parfait glasses. Divide banana mixture evenly among glasses
  5. Top each serving with 1 tablespoon pecans
