Recipe: Caramelized Banana French Toast

Looking to start your day on a positive note? Give a kick to the old French toast and add yummy caramelized bananas. This will give you the motivation to get out of bed on a Sunday morning. Caramelized Banana French Toast is also a perfect treat for the kids during their spring break vacation.

Ingredients:

French toast

  • 2 eggs
  • 1/3 cup of milk
  • 1 teaspoon cinnamon
  • 4 thick slices of day old bread (French or challah work well)
  • Butter or oil

Caramelized bananas

  • 1 firm banana, sliced
  • 1 tablespoon butter
  • 1 tablespoon brown sugar
  • 1/8 teaspoon cinnamon
  • Roughly chopped roasted hazelnuts, to garnish

Instructions:

  1. Beat eggs, milk and cinnamon together in a shallow bowl.
  2. Dip slices of bread into egg mix allowing the bread to soak up eggy goodness.
  3. Melt a pat of butter in a large skillet over medium to medium-high heat. Add the soaked slices of bread and fry until golden brown on both sides, flipping once.
  4. While your toast is getting golden, caramelize the bananas. Melt butter in a medium saucepan over medium heat. When the butter is melted, add the brown sugar and cinnamon and stir until the sugar dissolves. When the mixture is bubbling at the edges, add the bananas and stir to coat. Let bubble until caramel is thick and bubbly.
  5. Serve bananas on top of French toast. Sprinkle with roasted hazelnuts to finish.
