Banana Peanut Butter Ice Cream

Did you know that bananas can make for terrific ice cream? You don’t even need an ice cream maker or additional diary ingredients. When frozen and blended, the magic of this fruit turns into a silky, creamy mixture that serves as the perfect dessert. If you’ve ever wondered how to make use of extra ripened bananas that you have around, be sure to give this easy-to-make, gluten-free and diary-free recipe a try.

Ingredients

  • 4 ripe, soft bananas
  • 4 tablespoons peanut butter
  • 3 tablespoons honey

Makes approximately 4 servings

Instructions

  1. Peel bananas and slice into ½-inch discs
  2. Place banana pieces into an airtight, freezer-safe glass bowl or freezer bag. Freeze for at least two hours. Ideally, the banana slices should freeze overnight.
  3. Put the frozen banana slices into a food processor and pulse. (If you are using a food blender, make sure your blender is powerful enough to process frozen bananas).
  4. Scrape down bowl as needed while blending
  5. Add peanut butter and honey, and puree until the mixture is smooth and creamy
  6. Transfer mixture to an airtight container and return to the freezer until solid
