Recipe: Banana Oat Blueberry Cookies

Easy, delicious and healthy, this week’s recipe comes from Andrew Olson of One Ingredient Chef. Ready in minutes, these cookies make for a perfect snack anytime of the day and are great to make with kids. Ingredients
- 3 bananas
- 1 3/4 cups rolled oats
- 1/2 cup date sugar
- 1 teaspoon vanilla
- 2 pinches cinnamon
- 1 handful of fresh or frozen blueberries
- Optional add-ins (see below)
Makes 12 cookies
Instructions
- Preheat oven to 350° Fahrenheit
- Place three bananas into a bowl. Using a fork, mash them until no chunks remain
- Pour in the 1 3/4 cups rolled oats and 1/2 cup date sugar
- Mix until combined
- Stir in a pinch or two of cinnamon and a teaspoon of vanilla
- Pour in a handful of fresh or frozen blueberries and mix until well-combined. **Here you can also try any throw-ins you’d like (see suggestions below)
- Spoon the batter into 12 rounds and place them on a lightly oiled baking sheet
- Bake for about 10-14 minutes, until the outsides become golden and solid
- Remove from the oven and allow to cool for 10 minutes before eating
Throw-in Ideas
- Chocolate – Try adding chocolate chips into the batter or drizzling melted chocolate over the top after the cookies have baked.
- Nuts – Peanut butter is another delicious paring with these cookies. Whole nuts, such as almonds or walnuts, can also provide a tasty crunch with each bite.
- Coconut – To create a coconut macaroon-like cookie, add in a small handful of shredded coconut to the batter.
- Cinnamon Apple – Cut an apple into small pieces and add them to the batter with extra dashes of cinnamon for cinnamon apple cookies.
