Recipe: Banana Buttermilk Chocolate Cake

‘Tis the season to begin thinking about Christmas desserts! Try this banana buttermilk chocolate cake to bring holiday cheer. This classic cake brings out the best of bananas and chocolate with ease.

Banana Buttermilk Chocolate Cake
Serves 12-16

Ingredients:

  • 1 bundt or 10-inch ring pan
  • 2 cups all purpose flour
  • 2/3 cup cocoa powder
  • 2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, room temperature
  • 1 1/2 cups sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 ripe, medium bananas, mashed (about 1 cup)
  • 1 cup buttermilk

Instructions:

  1. Preheat oven to 350°F and lightly grease a 10-inch ring pan
  2. In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda and salt
  3. In a large bowl, cream together butter and sugar until light
  4. Beat in the eggs one by one, waiting until each has been incorporated to add the next
  5. Beat in vanilla extract and mashed bananas
  6. Add half of the flour mixture to the butter mix and stir to combine
  7. Add in the buttermilk, followed by the remaining flour mixture
  8. Pour batter into prepared pan
  9. Bake for 50-55 minutes, or until a toothpick inserted into the center of the cake comes out clean and the top springs back when lightly pressed
  10. Allow cake to cool completely in the pan, then run a knife around the edges of the pan, turn cake out, and reinvert onto a serving platter
  11. Thoroughly enjoy!
