Dark Chocolate Banana Matzo Brei

Looking for a new way to spice up your matzah? Try adding a bit of dark chocolate and bananas to create a decadent Matzo Brei. 

Dark Chocolate Banana Matzo Brei
Serves 2

Ingredients:

  • 3 matzos (broken into 2-inch pieces)
  • 1 banana, plus more banana slices
  • 1 tablespoon of honey
  • 2 ounces of dark chocolate, chopped into pebble-sized pieces
  • 1/2 ounce dark chocolate for melting
  • 2 tablespoons milk
  • 1/4 cup vegetable oil plus 1 tablespoon (separated)
  • 1 large egg
  • 1/4 teaspoon coarse salt

Instructions:

  1. Soak matzos in cold water for 5 minutes and drain in a colander
  2. Mash banana using a fork and add oil, egg, and salt
  3. Gently stir in matzos, chopped chocolate, and honey
  4. Heat 1 tablespoon oil in a medium skillet over medium heat
  5. Spread matzo mixture evenly in skillet, pressing gently
  6. Cook until the underside is golden (about 4 minutes)
  7. Flip using a spatula (mixture may break up)
  8. Cook until underside is golden (about 5 minutes)
  9. In a microwave-safe bowl, melt 1/2 ounce chocolate with the milk
  10. Transfer the banana matzo to plates and top with banana slices, and drizzle with the melted chocolate
