Dark Chocolate Banana Matzo Brei
Looking for a new way to spice up your matzah? Try adding a bit of dark chocolate and bananas to create a decadent Matzo Brei.
Dark Chocolate Banana Matzo Brei
Serves 2
Ingredients:
- 3 matzos (broken into 2-inch pieces)
- 1 banana, plus more banana slices
- 1 tablespoon of honey
- 2 ounces of dark chocolate, chopped into pebble-sized pieces
- 1/2 ounce dark chocolate for melting
- 2 tablespoons milk
- 1/4 cup vegetable oil plus 1 tablespoon (separated)
- 1 large egg
- 1/4 teaspoon coarse salt
Instructions:
- Soak matzos in cold water for 5 minutes and drain in a colander
- Mash banana using a fork and add oil, egg, and salt
- Gently stir in matzos, chopped chocolate, and honey
- Heat 1 tablespoon oil in a medium skillet over medium heat
- Spread matzo mixture evenly in skillet, pressing gently
- Cook until the underside is golden (about 4 minutes)
- Flip using a spatula (mixture may break up)
- Cook until underside is golden (about 5 minutes)
- In a microwave-safe bowl, melt 1/2 ounce chocolate with the milk
- Transfer the banana matzo to plates and top with banana slices, and drizzle with the melted chocolate
