Recipe: Yucatan Chicken

Yucatan Chicken

This “urban” version of Yucatan Chicken is easy to make and never fails to provoke oohs and aahs from guests.  The banana in the marinade makes for an amazing coating that turns a nice red orange when finished.  Make sure you cook enough, because your guests are sure to ask for seconds.

Yucatan Chicken

Yields 8-10 servings

Ingredients

  • 1/2 cup achiote paste
  • 2 tablespoons chopped chipotle chili pepper
  • 1 ripe banana
  • 1 cup orange juice
  • 2 tablespoons kosher salt
  • 10 large boneless chicken breasts

Instructions

  1. Blend marinade ingredients in a food processor until the mixture is thick
  2. Pour into a sealable plastic bag, add the chicken and marinate overnight in the refrigerator
  3. Barbeque with marinade on chicken, being careful not to burn the chicken as it cooks. Watch closely
  4. The finished chicken will have nice orange red color
