Healthy Banana Brownies
Ingredients
- 1 cup mashed ripe bananas (about 2)
- 1 free range egg
- 1/4 cup sunflower oil
- 3/4 cup brown sugar
- 2 tsp vanilla extract
- 1/2 cup low-fat vanilla yogurt
- 1 scoop (1 oz) chocolate whey or soy protein powder
- 2 tbsp unsweetened cocoa powder
- 1/2 tsp baking powder
- 1 and 1/2 cups rice flour
- 1/2 cup walnuts
- 1/2 cup semi-sweet dark chocolate chips
- a little butter
Directions
- Grease a 9×9 glass casserole dish or baking pan with butter. Set the oven at 350º F.
- In a large bowl, combine the mashed banana and egg; mix well. Add oil, sugar, vanilla and yogurt.
- In a small bowl, combine and mix protein powder, cocoa and baking powder.
- Blend in dry mixture to the wet mixture.
- Gently stir in flour, walnuts and chocolate chips until just blended, don’t over mix.
- Pour batter in dish or pan and bake for 25 to 30 minutes. Cool in pan and cut into squares.
