Recipe Breakfast Banana Kebabs

We want to share two of the most perfect breakfast recipes that will inspire the most excellent morning for your July 4th weekend. And the best part is, you can eat them on a stick! First are french toast kebabs and the second is buckwheat blini kebabs. Each with their own distinct characteristics, they will guarantee a great start to your long weekend.

French Toast Kebabs (makes 4)

French Toast Kebabs

Ingredients:

  • 8 large eggs, lightly beaten
  • 2/3 cup nonfat buttermilk
  • pinch of salt
  • 1/4 teaspoon vanilla extract
  • 1 loaf (one-pound) unsliced dense white bread (such as pullman), crusts removed and cut into 1-inch cubes
  • 4 tablespoons unsalted butter
  • 1/2 pint fresh blueberries
  • 1/2 pint fresh raspberries
  • 2 organic bananas, sliced
  • Maple syrup (optional)

Instructions:

  1. Preheat oven to 250 degrees. Place a rimmed baking sheet in the oven to warm
  2. In a medium bowl, whisk together eggs, buttermilk, salt, and vanilla. Stir in bread
  3. In a large saute pan set over medium heat, melt 2 tablespoons butter. Place half of the bread mixture in pan; cook, turning occasionally with a spatula, until browned on all sides. (To keep warm, transfer to the oven.)
  4. Cook remaining bread in the remaining 2 tablespoons butter as before
  5. Thread bread cubes onto skewers alternating with blueberries, raspberries, and banana slices.
  6. Serve immediately with maple syrup, if desired

Buckwheat Blini Breakfast Kebabs (makes 8)

Buckwheat Blini Breakfast Kebabs

Ingredients:

  • 100g buckwheat flour
  • Scant ½ tsp bicarbonate soda
  • 150ml soy milk (or other dairy free milk)
  • 1tsp ground chia or flax
  • 3 tbs agave syrup
  • ½ tsp cinnamon
  • 1 tsp vanilla
  • Organic bananas – sliced
  • Apricots halves
  • extra water to thin batter as needed

Instructions:

  1. Blend together all ingredients (other than water) until very smooth. Add as much water as necessary to create a thick but easily pourable batter
  2. Prepare fruit for kebabs- you can use any fruit that can be skewered. Set aside
  3. Using a melon baller (most practical method) spoon small dollops of the pancake mixture onto a hot lightly oiled frying pan and fry for approx. 30 seconds or so on each side until golden
  4. When all the blinis are cooked thread them onto skewers alternating with chunks of fruit.
  5. Drizzle with maple syrup to serve
