Recipe: Swirl Me Around Banana Bread


Looking for a new twist on banana bread? Try out Swirl Me Around Banana Bread and mix it up with dulce de leche, toasted coconut and pecans. The unique blend of flavors will swirl you around and make it impossible for you to put it down.


Makes one loaf


  • 1 1/4 cup flour
  • 1/2 tsp baking soda
  • 1/8 cup butter
  • 1 large egg
  • 2 ripe bananas
  • 1/2 cup coconut
  • 1/2 cup pecans
  • 1/2 cup sugar
  • 3 tbsp cream cheese
  • 1/4 cup cream
  • 1/3 cup dulce de leche (or to taste)


  1. Toast your coconut in a pan, mixing continusously until is golden and then remove immediately.
  2. Beat the butter with the sugar until light and fluffy. Add the egg, mixing well. Then add the mashed bananas, cream and cream cheese and beat until incorporated
  3. In a separate bowl mix the flour, baking soda, toasted coconut and pecans. Add these dry ingredients to the batter and mix just until it all comes together
  4. Flour and butter a loaf pan and add 1/3 of the batter. Add dollops of 1/3 of the dulce de leche and swirl it with a knife cutting thru the batter. Repeat with the rest of the batter and dulce de leche, making a swirl on top
  5. Bake in a 180ºC (350ºF) preheated oven until it’s nice and golden and when you insert a toothpick (or knife) and it comes out clean
