Recipe: Banana Brownies with Cacao Nibs

Banana Brownies

Chocolate and banana make a perfect pair. One bite of these warm, chocolatey banana brownies and you’ll forget about all your worries.

We’ve seen banana bars, now try these brownies on for size.

Banana Brownies with Cacao Nibs


  • 1/2 cup butter, softened
  • 2-oz dark chocolate, chopped
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 banana, mashed (approx 2/3 cup)
  • 2/3 cup flour
  • 3 tablespoons cocoa powder
  • 1/4 teaspoon salt
  • 1/4 cup cacao nibs (separated)
  • 1/2 cup chocolate chips


  1. Preheat oven to 350F
  2. Line a 9 × 9 inch square baking pan with aluminum foil and lightly grease
  3. In a small, heatproof bowl, melt butter and chocolate together and stir with a fork until very smooth (Set aside to cool for a few minutes)
  4. In a large bowl, whisk together sugar, eggs, and vanilla extract. Whisking steadily, pour chocolate mixture into sugar mixture and stir until smooth
  5. Stir in mashed banana to the mixture
  6. Sift flour, cocoa powder, and salt into the bowl and stir until just combined
  7. Add in chocolate chips and 3 tablespoons of cacao nibs, then pour brownie batter into prepared pan
  8. Sprinkle reserved tablespoon of cacao nibs over the top of the brownies
  9. Bake for about 30 minutes, until the brownies are set (Inserting a toothpick in the middle of the pan  should give you a few moist crumbs when you pull it out. If there is batter still on the toothpick bake for longer)
  10. (Brownies can also be baked in a 8×8 pan for 35-40 minutes)
  11. Cool in the pan completely before slicing and serving
