Recipe: Banana Crunch Popsicle

Produce for Kids has been a huge supporter of our GROW program. We decided to use one of their many recipes to feature a deliciously healthy snack. This tasty treat also becomes a fun activity for children and builds anticipation for their healthy Popsicle. Just like bananas, pistachios are full of potassium and are also high in protein, making it the perfect mix of health benefits for you and your children. This five minute snack is also great for children’s summer parties and barbeques.


  • 2 organic bananas, cut in half
  • 1/ 4 cup of chopped pistachios
  • 1/ 4 cup of unsweetened shredded coconut
  • 1/ 2 cup of low-fat Greek vanilla yogurt

*Serves 4


  1. Line baking sheet with parchment paper
  2. Mix pistachios and coconut in shallow bowl
  3. Insert popsicle stick into each half of banana, roll in Greek yogurt then in pistachio/coconut mixture
  4. Place coated bananas on baking sheet. Freeze for two hours or until firm
